Apricot-Glazed Chicken Breasts Recipe Makes Dinnertime Extra Delicious

Apricot preserves, soy sauce and rosemary give chicken breasts a sweet and savory upgrade

When I’m wondering what to make for dinner, I often opt for chicken. It’s so versatile, plus it’s easy and quick to make. And chicken is a good source of high-quality protein. But poultry can be a little bland on it’s own, so livening it up with a delicious sauce or glaze is key. That’s what inspired this Apricot-Glazed Chicken Breasts recipe. It’s packed with sweet and savory flavor and the chicken turns out moist and juicy.

The trick to cooking chicken is to sear the meat at medium-high heat on both sides. Next, for our yummy glaze, we start with jarred fruit preserves. We used apricot here, but you can sub in any favorite you like. During cooking, the glaze combines with juices from the bird to create a delicious pan sauce. Ingredients

  • ¼ cup apricot preserves
  • 1 Tbs. grainy Dijon mustard
  • 1 Tbs. soy sauce
  • 1 Tbs. apple cider vinegar
  • 1 Tbs. minced fresh rosemary
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 6 (6 oz.) boneless, skinless chicken breast halves
  • 1 Tbs. oil

In bowl, mix preserves, mustard, soy sauce, ginger and rosemary; reserve half for brushing over chicken before serving. Sprinkle salt and pepper over chicken.

In 12" nonstick skillet, heat oil over medium-high heat. Add chicken; cook, flipping once, until browned, 3–4 min. per side. Brush with remaining apricot mixture. Cover; over low heat, cook until no longer pink in centers, 8–10 min. Transfer to platter. Brush with reserved apricot mixture and pour any pan juices over.
