Balsamic-Mustard Chicken Kebabs Recipe is Full of Rich Flavor

I like to grill all year, no matter what the weather. Grilling gives food a deep, rich flavor with a hint of delicious smokiness that no other cooking method can come close to. Plus, eating food hot off the grill immediately transports me to summertime, and I’m all for that! This balsamic-mustard chicken kebabs recipe is the perfect grilled dish. It’s full of fabulous flavor whether you’re eating it in December or August. And it’s ready after just 15 minutes on the grill.

For this yummy dinner we marinate skewers of chicken, green and yellow squash and red pepper in a zingy marinade made with olive oil, balsamic vinegar and mustard. Marinating it overnight really lets the food absorb the tangy flavor. Then we grill the skewers and brush them with extra marinade. Ingredients

  • 8 (10") skewers
  • ⅓ cup olive oil
  • 3 Tbs. balsamic vinegar
  • 3 Tbs. whole-grain mustard
  • 1 Tbs. Montreal chicken seasoning
  • 1½ lbs. boneless, skinless chicken thighs, cut into 1½" pieces
  • 1 lb. green and/or yellow squash, cut into ½"-thick moons
  • 1 large red pepper, cut into 1¼" pieces
  • 1 cup cherry tomatoes

If using wooden skewers, first soak in water 15 min. In bowl, whisk oil, vinegar, mustard, seasoning and 2 Tbs. water. Dividing evenly, alternately thread chicken and vegetables onto skewers. Place in 13"x9" baking dish. Brush with oil mixture, turning to coat. Cover; chill overnight.

Prepare grill for medium direct-heat cooking. Remove skewers from baking dish, reserving marinade. Grill skewers, rotating occasionally, until chicken is no longer pink in centers, 15 min. Meanwhile, transfer reserved marinade to small pot; boil until thickened, 3 min. Brush over skewers.
