Bat Sandwiches
Zesty bean filling adds a tasty twist to these pumpernickel bites.

Ingredients
- 1 (15.5 oz.) can small white beans, rinsed, drained
- ⅓ cup chipotle ranch salad dressing
- 1 clove garlic, quartered
- 1½ tsp. lemon juice
- ⅛ tsp. salt
- Orange concentrated food coloring
- 12 slices pumpernickel bread
Instructions
- In food processor, combine beans, dressing, garlic, lemon juice and salt; process until smooth. Tint orange with tiny amount of food coloring.
- Transfer ½ cup bean mixture to small bowl; tint darker orange. Transfer to pastry bag fitted with small round tip. If desired, transfer remaining bean mixture to pastry bag fitted with star tip.
- Using 4″ bat-shaped cookie cutter, cut out 1 bat from each bread slice. Using pastry bag with star tip, pipe (or spread) filling over half of bats; top with remaining bats. Using darker orange mixture, pipe outlines and details over bats. Cover; chill until ready to serve.
