When the weather is cold outside, there’s better than settling in with a hearty slow-cooked supper. And beef stew is one of my favorites. As it simmers on the stove, the wonderful aroma makes me feel so warm and cozy. That’s why I love this Beef, Mushroom & Sweet Potato Stew recipe. It cooks in one pot so cleanup is a breeze. Plus, we have a shortcut ingredient that makes it extra hearty.

For a hint of peppery sweetness, we coat the meat in flour and a dash of paprika before browning. Next the secret ingredient. We stir in a can of condensed onion soup. How fun is that. It adds richness, jump-starts flavor and makes a deliciously thick and creamy sauce. It simmers for several hours so all you have to do next is kick back and watch a good movie while this dinner winner practically cooks itself. Ingredients

  • 2 lbs. 1¼" beef stew cubes
  • 2 Tbs. all-purpose flour
  • 1 tsp. paprika
  • 2 Tbs. olive oil
  • 1 (15 oz.) can crushed tomatoes
  • 1 (10½ oz.) can condensed French onion soup
  • 1½ lbs. sweet potatoes, peeled, cut into 11⁄4" pieces
  • 8 oz. baby bella mushrooms, quartered
  • ¾ cup sour cream

Toss beef with flour and paprika. In large pot, heat 1 Tbs. oil over medium heat. Add half of beef. Cook, turning, until browned, 5 min.; remove. Repeat with remaining oil and beef. Return beef to pot. Add tomatoes, soup and 1 cup water. Bring to boil; over medium-low, cook, partially covered, stirring, 11⁄2 hrs. Add potatoes and mushrooms. Cover; over low, cook until tender, 1 hr. Stir in sour cream.
