Caramelized Apricot Pudding Parfaits

Ingredients

  • 2 (3.4 oz.) pkgs. instant French vanilla pudding mixes
  • 4 cups cold milk
  • 6 apricots, each cut into 8 wedges
  • ¼ cup + 2 tsp. packed light brown sugar
  • 2 Tbs. butter, cut into pieces
  • 2 cups whipped topping

Instructions

  1. Prepare pudding mixes according to package directions using cold milk; divide evenly among eight 8-oz. glasses. Refrigerate at least 5 min.
  2. Heat broiler. Line rimmed baking sheet with foil. In bowl, toss apricot wedges with ¼ cup packed brown sugar until coated; transfer to baking sheet. Dot with butter. Broil 3–5 min., until golden brown and tender; cool slightly. Reserve juices in pan.
  3. Dividing evenly, top puddings with apricot wedges and reserved pan juices. Just before serving, dividing evenly, top parfaits with whipped topping and sprinkle with remaining brown sugar.
