Banana Silver Dollars

For quick, satisfying dessert, whip up a batch of these and freeze for future use. Each time you get a sweet tooth, pop a few in the toaster and enjoy with fruit, whipped topping and flaked coconut.

  • 2 medium ripe bananas
  • 3 eggs
  • 3 Tbs. coconut flour
  • 1½ tsp. cocoa powder
  • ¾ tsp. ground cinnamon
  • ¾ tsp. baking soda
  • Pinch of salt
  • Whipped coconut cream and sweetened coconut flakes (optional)

Instructions

  1. Heat oven to 400°F. Grease 6-well muffin-top pan. In blender, combine bananas, eggs, coconut flour, cocoa, cinnamon, baking soda and salt. Puree 30 sec. or until blended. Divide batter evenly among wells of prepared pan.
  2. Bake 5 to 6 min. or until set. If desired, serve with whipped coconut cream and sweetened coconut flakes.
