Banana Silver Dollars
For quick, satisfying dessert, whip up a batch of these and freeze for future use. Each time you get a sweet tooth, pop a few in the toaster and enjoy with fruit, whipped topping and flaked coconut.

- 2 medium ripe bananas
- 3 eggs
- 3 Tbs. coconut flour
- 1½ tsp. cocoa powder
- ¾ tsp. ground cinnamon
- ¾ tsp. baking soda
- Pinch of salt
- Whipped coconut cream and sweetened coconut flakes (optional)
Instructions
- Heat oven to 400°F. Grease 6-well muffin-top pan. In blender, combine bananas, eggs, coconut flour, cocoa, cinnamon, baking soda and salt. Puree 30 sec. or until blended. Divide batter evenly among wells of prepared pan.
- Bake 5 to 6 min. or until set. If desired, serve with whipped coconut cream and sweetened coconut flakes.
