A snap to create, these no-bake parfaits can be made a day ahead and refrigerated, then assembled just before serving.
- 4 chocolate brownie cookies broken
- 1/2 c. + 4 tsp. heavy cream
- 2 tbsp. confectioners' sugar
- 1/2 tsp. vanilla extract
- 2 c. raspberries
- 4 tbsp. 60 percent dark chocolate chips
- Mint sprigs (optional)
Dividing equally, place half of cookie pieces in bottoms of 4 dessert glasses.
In jar with lid, mix 1/2 cup cream, sugar, and vanilla. Cover; shake until mixture thickens. Top cookies with half of cream.
Arrange half of berries over cream; top with remaining cookie pieces.
In microwave-safe bowl, microwave chocolate chips and remaining cream in 30-sec. intervals, stirring, until smooth. Pour over cookies. Top with remaining cream, berries, and mint.
