Ingredients

  • 1 egg
  • ¼ cup blueberries
  • 2 Tbs. lemon juice
  • 2 Tbs. heavy cream
  • ½ tsp. lemon stevia
  • 2 Tbs. almond flour
  • ¼ tsp. baking powder
  • Whipped cream (optional)

Instructions

  1. Whisk all ingredients in a large mug until fully combined and smooth. Microwave until cake raises, about 90 sec.
  2. Top with stevia-sweetened whipped cream and lemon zest, if desired.
