Ingredients
- 1 egg
- ¼ cup blueberries
- 2 Tbs. lemon juice
- 2 Tbs. heavy cream
- ½ tsp. lemon stevia
- 2 Tbs. almond flour
- ¼ tsp. baking powder
- Whipped cream (optional)
Instructions
- Whisk all ingredients in a large mug until fully combined and smooth. Microwave until cake raises, about 90 sec.
- Top with stevia-sweetened whipped cream and lemon zest, if desired.
