Red Velvet Mug Cakes

With a little help from the microwave, you can “bake up” delectable red velvet sweets to share with your loved ones in mere minutes.

Ingredients

  • 1 egg
  • 3 tbsp. oil
  • 1 tsp. liquid red food coloring
  • 3 tbsp. buttermilk
  • 2 tsp. vanilla extract
  • 1/4 c. sugar
  • 2 tbsp. unsweetened cocoa powder
  • 1/4 c. self-rising flour
  • Pinch of kosher salt
  • 1/4 tsp. apple cider, white wine, or rice vinegar
  • Sweetened whipped cream (optional)

Instructions

Print

In large microwave-safe mug, stir together egg and oil with fork. Stir in red food coloring, buttermilk, vanilla, and sugar.

Add cocoa powder, flour, salt, and vinegar. Beat batter until smooth, scraping down sides of mug. 

Scoop half of batter into second microwave-safe mug. 

Microwave separately for 1 1/2 to 2 1/2 min. each until risen and firm.

If desired, top with whipped cream.
