This Easy, Cheesy Chimichangas Recipe Will Make Your Weeknight So Flavorful

These baked pockets have 65% less fat than the deep-fried version

Looking for a fun weeknight dinner that’s easy on your time and wallet? This cheesy chimichangas recipe is your answer! But what are chimichangas? They’re popular in Tex-Mex cuisine. Usually prepared with flour tortillas, these deep-fried burritos commonly hold rice, cheese, beans and meat. Our recipe takes just 35 minutes, and baking them in the oven uses 65% less fat than deep-frying while avoiding a greasy mess. Just one serving has only 7 grams of fat thanks to low-fat cheddar. You can also swap in corn tortillas for a high-fiber, low carb alternative.

In any chimichangas recipe, you wont a leak-proof, crispy encasing. Ensure your tortillas are completely thawed and pliable before wrapping.   • 1 (8 oz.) pkg. Spanish-style yellow rice
  • 2 cups spinach, coarsely chopped
  • 1 (16 oz.) can refried beans
  • 1 (11 oz.) can corn, drained
  • 1 1/2 cups shredded low-fat cheddar
  • 1 (4 oz.) jar diced pimentos, drained
  • 2 scallions, chopped
  • 1/3 cup chopped fresh cilantro
  • 1 Tbs. green Tabasco sauce
  • 6 burrito-size flour tortillas, from 20-oz. pkg.
  • Salsa, lime wedges and sour cream (optional)



Heat oven to 425°F. In pot, bring 2 cups water to boil over medium-high heat. Add rice; boil 1 min. Reduce heat to low; cook until tender, about 20 min. Drain if necessary; stir in spinach until wilted. Transfer to bowl; stir in beans, corn, cheddar, pimentos, scallions, cilantro and Tabasco.

Dividing evenly, spoon mixture over 1/3 of each tortilla leaving about 2” border around side. Fold side in over filling; roll up to enclose. Place seam side down on surface. If desired, tie with kitchen string to secure on all sides.

Place seam side down on baking sheet. Coat with cooking spray. Bake until browned and heated through, 5–6 min. Transfer to platter. If desired, serve with salsa, lime wedges and sour cream.
