Our Shortcut Pulled Chicken Sandwiches Recipe Is Packed With Irresistible Flavor

Whether you’re entertaining a crowd or cooking a weeknight meal for your crew, these pulled chicken sandwiches are busting with authentic barbecue flavor and are so easy to make thanks to pre-cooked rotisserie chicken. And the best part? It’s ready from start to finish in just 20 minutes!

Whether you’re cooking chicken breasts low and slow in flavorful sauce or purchasing an already-prepared rotisserie chicken, shredding the cooked meat with two forks can be a bit time-consuming. Instead, we like to use a stand mixer to do the work. To do: Simply place your chicken in a stand mixer with the paddle attachment, and on medium-low speed, beat until the chicken is fully shredded. Voilà!

Ingredients

  • 3 Tbs. apple cider vinegar
  • 1 Tbs. oil
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 3 cups packaged fresh coleslaw mix, from 14-oz. pkg
  • 1/3 cup chili sauce
  • 1 Tbs. molasses
  • 1/2 tsp. smoked paprika
  • 2 cups shredded rotisserie chicken, at room temp.
  • 4 sandwich buns, split

In medium bowl, combine 1 Tbs. apple cider vinegar, oil, salt and pepper. Add coleslaw mix; toss until evenly coated and combined. Cover and chill.

In medium pot, combine chili sauce, molasses, smoked paprika and remaining 2 Tbs. apple cider vinegar; over medium heat, bring to a boil. Reduce to medium-low; cook, stirring occasionally, until heated through and slightly thickened, 3–5 min. Add chicken; cook, stirring, until heated through, about 3 min.

Divide 1 cup coleslaw mixture evenly among roll bottoms. Top each with chicken mixture. Serve sandwiches with remaining coleslaw.
