This Flavorful Sweet Potato Chili Recipe Is a Meatless Marvel

Whether you follow a plant-based lifestyle or just like to skip the meat occasionally, our sweet potato chili recipe has you covered. Using two diced sweet potatoes in place of ground beef, this dish packs some surprising health benefits. For starters, sweet potatoes help steady and even lower blood sugar levels because of the naturally-occurring resistant starches they contain. Second, these spuds lower insulin, which can help burn fat. And finally, sweet potatoes contain several nutrients, including proteinase inhibitors, that slow digestion, keeping us full seven times longer than most foods and three times longer than steak. 

The superfood works its flavorful magic in this dish, making it just as delicious as it is good for you. Our taste-enhancing secret? We toss the sweet potatoes in some of the liquid from the canned beans to add natural earthy flavor during the roasting process.

Ingredients

  • 2 lbs. sweet potatoes, peeled and diced
  • 28 oz. beans, undrained
  • 1 onion, diced
  • 4 tsp. minced garlic
  • 3 Tbs. chili powder
  • 1 tsp. cocoa
  • 28 oz. fire-roasted tomato

Instructions

Toss sweet potato with 1 Tbs. bean liquid; salt to taste. Roast at 400°F for 20 minutes. In pot, sauté onion in 1 ⁄4 cup water until soft. Add garlic, chili powder, cocoa, tomatoes, beans and 1 can of water. Simmer 30 minutes. Add sweet potato.
