This Frozen Cucumber Margaritas Recipe Makes Any Day Feel Like a Celebration

Nothing is more refreshing than a slushy — and this Cucumber Margaritas recipe fits the bill. The frosty cocktail uses English cucumbers, which are sweeter than regular varieties, and blends it with lemon sorbet, lime juice and other ingredients. Cucumber vodka along with silver tequila provide the drink with contrasting smooth and smoky flavors. The secret that makes this drink extra special? Frozen cucumber cubes are used in place of ice when blending. This keeps the batch of margaritas chilled so they don’t become watery and lose their flavor. If you want to reduce the calories, opt for a low-sugar lemon sorbet. Ingredients

  • 6 cups (¾" pieces) peeled, seeded English cucumber
  • ¼ cup coarse decorating sugar
  • 2 Tbs. kosher salt
  • 3 cups lemon sorbet
  • 1½ cups silver tequila
  • ¾ cup cucumber vodka
  • ¾ cup lime juice
  • ¾ cup cilantro leaves
  • Mango slices, lime slices and whipped topping (optional)

Line rimmed baking sheet with waxed paper. Arrange cucumber pieces in single layer on sheet. Freeze 2-3 hrs.

On small plate, mix sugar and salt. Lightly brush rims of 6 (8 oz.) margarita glasses with water then dip into sugar mixture; invert. Let dry.

In blender, puree 2 cups cucumber pieces, 1 cup sorbet, 1⁄2 cup tequila, 1⁄4 cup vodka, 1⁄4 cup lime juice and 1⁄4 cup cilantro. Divide between 2 glasses. Repeat 2 more times. If desired, garnish with mango, lime and topping.
