Eye-Poppin’ Peas

The kids are sure to eat their veggies when they lay their eyes on this creepy-cute bowl of fun.

Ingredients

  • 2 bunches radishes, trimmed
  • ½ red onion, thinly sliced (like worms)
  • 2 Tbs. butter, melted
  • 2 cups frozen petite peas, thawed
  • ½ tsp garlic powder
  • ½ tsp. onion powder
  • Salt
  • Pepper

Instructions

  1. In partially covered microwave-safe bowl, microwave radishes 5 min. or until tender; rinse with cold water. Hold 1 radish firmly; using paring knife, cut diagonally to make to make 2 (¾” thick) wedges. Cut ¼” thick wedge from center of each wedge; repeat with 7 radishes. Cut remaining radishes into wedges.
  2. In skillet over medium-high heat, cook onions in butter, stirring occasionally, until tender, about 5 min. Add radish wedges, peas, garlic powder and onion powder; cook until heated through, about 2 min. Season to taste with salt and pepper.
  3. Spoon pea-radish mixture into serving bowl. Arrange radish eyes in 4 pairs over peas; press 1 pea into each eye for pupil.
