Fast + Easy Fettuccine with Herbed Pea Pesto Recipe Is a Delicious Twist On a Classic
This tasty toss is ready to eat in just 30 minutes
Basil pesto pasta is one of my favorite quick-fix suppers. And though there are many good varieties of jarred pesto out there, sometimes I crave something a little bit more special. That’s what inspired this Fettuccine with Herbed Pea Pesto recipe. With minimal effort, the sauce comes together in minutes. And it’s so yummy, once you try it, we promise you’ll want to make it again and again.
We start with frozen peas. They’re already partially cooked so all you need to do is whiz them up with parsley, mint, olive oil, Parmesan, lemon juice and garlic. The herbs add a hint of brightness that complements the peas perfectly, while the citrus and cheese give it zing and a nutty finish. For a dose of protein, we toss everything together with seared chorizo. The sausage and drippings give the dish a pop of smoky deliciousness. Give it a go and let us know what you think.

Ingredients
- 8 oz. fettuccine pasta
- 1½ cups frozen peas, thawed, drained
- ½ cup fresh mint leaves
- ½ cup fresh parsley leaves
- ¼ cup olive oil
- ¼ cup grated Parmesan cheese
- 2 Tbs. lemon juice
- 2 cloves garlic
- 2 links smoked chorizo sausage (3.5 oz.), sliced
- ¼ cup whole natural almonds, toasted, chopped
- Parmesan shavings and additional mint (optional)
Instructions
PrintCook pasta according to package directions. Reserve 1⁄2 cup cooking liquid. Drain pasta; return to pot. Meanwhile, in food processor, pulse peas, 1⁄2 cup mint, parsley, oil, grated Parmesan, lemon juice and garlic until almost smooth. Reserve.
Coat 12" nonstick skillet with cooking spray; heat over medium heat. Add chorizo; cook, flipping once, until lightly browned, 2 min. per side. Stir pea mixture, chorizo and reserved cooking liquid into pasta. Serve topped with almonds, Parmesan shavings and additional mint.
