Gobble, Gobble Pumpkin Pie

Our festive decoration will make this upgraded dessert classic the talk of the Thanksgiving table.

Ingredients

Pie:

  • Half of 11-oz. pkg. pie crust mix
  • 1 can (15 oz.) pumpkin
  • 1 can (12 oz.) evaporated milk
  • 2 eggs
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 2 tsp. grated peeled fresh ginger
  • 1 tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 2 Tbs. finely chopped crystallized ginger
  • ½ tsp. grated orange zest 
  • ¼ tsp. pepper 

Decoration:

  • Half of 11-oz. pkg. pie crust mix
  • Red, orange and yellow concentrated food colorings 
  • 1 egg, beaten
  • Orange and red gumdrops
  • 2 candy eyes
  • Vanilla frosting

Instructions

To make pie:

  1. Place baking sheet on center rack in oven. Preheat oven to 375°F. Coat 9″ pie pan with cooking spray. Prepare half of pie crust mix according to package directions for 1 crust. On lightly floured surface, roll out dough into 12″ round. Fit into pie pan; trim and flute edge. Chill at least 30 minutes.  
  2. In large bowl, whisk together pumpkin, evaporated milk, eggs, granulated and brown sugars, ginger, cinnamon, nutmeg, crystallized ginger, zest and pepper. Pour into crust. Bake on hot baking sheet 1 hour or until center is set. Cool completely on rack. 

To make decoration:

  • For turkey head and feather: Make templates on thin cardboard by drawing 4″x1¾ ” and 3″x1½” oval leaf shapes and 4″x2¾ ” head shape; cut out.
  • Preheat oven to 350°F. Line baking sheet with parchment paper. Prepare half of 11-oz. pkg. pie crust mix according to package directions for 1 crust. On lightly floured surface, roll out to ⅛” thickness. 
  • Using templates and fluted pastry wheel or knife, cut out shapes. Place a few dots of red, orange and yellow concentrated food colorings in separate small bowls; dilute each with tiny amount of water. Lightly brush over feather cutouts. Place feathers and body on baking sheet. Brush with beaten egg. Bake 8 minutes or until lightly golden. 
  • For beak and waddle shapes, cut pieces from orange and red gumdrops. Attach 2 small candy eyes, beak and waddle to turkey head with dots of canned vanilla frosting. Arrange feathers and turkey head on cooled pie.
