During summer there’s nothing I like better than to fire up the grill and host a backyard bash. And a juicy steak is my go-to for the star of the show. Seasoned with salt and pepper and cooked to perfect medium-rare it turns out so tender and delicious. But sometimes I like to mix things up. That’s why this Grilled Sirloin with Pineapple Salsa recipe is my new favorite. Just two simple upgrades take it over the top.

Marinades are an easy way to add bold flavor. The acidic mixture helps break down muscle fibers in meat. We use zesty lime juice combined with oil, brown sugar and red pepper flakes. It infuses the steak with the perfect amount of sweet heat. Fruit salsas pair deliciously with grilled meats. We use pineapple, but you can sub in any fruit you like — peaches, strawberries or mango would be just as tasty. Grill up this recipe yourself, then let us know what you think.

Ingredients

  • 5 Tbs. lime juice
  • 3 Tbs. olive oil
  • 1 Tbs. brown sugar
  • 1/2 tsp. grated lime zest
  • 1/2 tsp. salt
  • 1/2 tsp. red pepper flakes
  • 2 lbs. (1 1/2” thick) boneless sirloin steak
  • 1/2 whole pineapple, peeled, cored, diced
  • 1/2 cup diced red pepper
  • 1/3 cup chopped red onion
  • 2 Tbs. chopped cilantro

In bowl, mix 4 Tbs. lime juice, 2 Tbs. oil, sugar, zest, salt and pepper flakes. Place steak in 3-qt. baking dish; rub marinade over. Let stand 1 hr.

Prepare grill for medium-high direct-heat cooking. Grill steak, flipping once, 6-7 min. per side for medium-rare or until desired doneness. In bowl, combine pineapple, red pepper, onion and cilantro. Serve with steak.
