During the long cold winter, I’m always in the mood for a piping hot bowl of soup. And while opening up a can is super-convenient, making a pot from scratch is so much more satisfying. Take this Hearty Chicken Vegetable Soup recipe. It comes together with just a handful of ingredients. And our short-cut method makes it a snap to toss together.

We start by sauteing root veggies in a dash of olive oil. This simple step helps to caramelize natural sugars for another layer of flavor. We use carrot, onion, turnip and fennel. When cooked, fennel has a slightly sweet anise-like taste and that’s absolutely delicious. Now for the short-cuts — store-bought stock and rotisserie chicken! How easy is that. Ingredients

  • 1 Tbs. olive oil
  • 1 turnip, chopped
  • 1 onion, chopped
  • 1 carrot, chopped
  • ½ cup chopped fennel
  • 6 cups chicken broth
  • 2 cups shredded rotisserie chicken

In pot, heat oil over medium heat; add turnips, onion, carrot and fennel. Cook, stirring, until starting to soften, about 5 min.

Add broth and chicken; simmer until flavors blend, 15 min. Season to taste with salt. If desired, garnish with parsley
