- 2 cups all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup butter, at room temp.
- 2/3 cup sugar
- 1 egg
- 1 tsp. vanilla extract
- 1/2 cup mini chocolate chips
- 4 cups strawberry ice cream, softened slightly
Instructions
PrintHeat oven to 350°F. Line rimmed baking sheets with parchment paper. Mix flour, baking powder, baking soda and salt. On medium speed, beat butter and sugar until fluffy; beat in egg and vanilla. On low, beat in flour mixture, then chocolate chips. Divide into 16 rounds. Place 2” apart on baking sheets. Bake until golden, about 10 min. Let cool 5 min. Transfer to rack; let cool.
Line rimmed baking sheet with parchment paper. Scoop 1/2 cup ice cream over flat side of each of 8 cookies. Press on remaining cookies. Transfer to baking sheet. Freeze.
