Ingredients

  • 1 Tbs. olive oil
  • 1 lb. ground turkey
  • 1 Tbs. grated peeled fresh ginger
  • 1 clove garlic, minced
  • ½ cup barbecue sauce
  • 8 leaves bibb lettuce
  • 2 scallions, sliced
  • 1 red jalapeño pepper, sliced (optional)
  • Cooked rice (optional)

In 12" nonstick skillet, heat olive oil over medium-high heat. Add ground turkey, ginger and garlic; cook, stirring, until turkey is no longer pink, 7–8 min. Stir in barbecue sauce and ¼ cup water; reduce heat to medium-low. Cook until flavors blend, about 5 min.

Dividing evenly, fill each lettuce leaf with turkey mixture. Sprinkle each with scallion slices and, if desired, jalapeño pepper slices. If desired, serve with hot cooked rice on the side.
