Quick Turkey Lettuce Cups Recipe Is a Low-Carb Treat — Only $1.83 a Serving!

Grated ginger adds plenty of zing to these tasty bites

I’m always looking for healthy and delicious alternatives to my comfort food favorites. And using crisp lettuce instead of a hamburger bun for a juicy Sloppy Joe sandwich makes a refreshing twist on the classic. So, if you’re looking for a low-carb meal that doesn’t skimp on flavor, then you’ve got to try this Turkey Lettuce Cups recipe. Plus, at only $1.83 a serving, it’s easy on your wallet.

Instead of beef, we use lean ground turkey to cut back on fat and calories. Then, for a zingy pop, we brown the meat with fresh ginger. This peppery root veggie is loaded with good-for-you benefits, including boosting immunity. Plus, all that kicked-up flavor means you need less barbecue sauce to bring the whole thing together. To finish the dish, we serve it up on Bibb lettuce leaves. Leave us a comment below to let us know what you think!

In 12" nonstick skillet, heat olive oil over medium-high heat. Add ground turkey, ginger and garlic; cook, stirring, until turkey is no longer pink, 7–8 min. Stir in barbecue sauce and ¼ cup water; reduce heat to medium-low. Cook until flavors blend, about 5 min.

Dividing evenly, fill each lettuce leaf with turkey mixture. Sprinkle each with scallion slices and, if desired, jalapeño pepper slices. If desired, serve with hot cooked rice on the side.
