Instead of layering ingredients in a pan like a traditional lasagna, individual noodles are filled with a creamy cottage cheese and pesto mixture, rolled up and baked in marinara sauce until bubbly and golden. Each serving delivers an impressive 31 grams of protein while keeping calories in check at just 443 per portion. They’re easier to make than traditional lasagna and look absolutely stunning on the plate. They also freeze well! Simply make roll-ups and place on a sheet pan; cover and freeze (wait to add sauce until thawing). Thaw overnight before assembling the casserole.

Ingredients

  • Kosher salt
  • 8 lasagna noodles, wheat or gluten-free
  • 16 oz. 2% cottage cheese, drained (such as Good Culture)
  • 1/2 cup grated Parmesan
  • 1/4 cup chopped fresh parsley
  • 2 Tbs. prepared pesto
  • 1 large egg
  • Freshly ground black pepper
  • 2 cups marinara, plus more for serving
  • 1/2 cup shredded part-skim mozzarella (about 2 oz.)
  • Chopped fresh basil or parsley, for garnish

Heat oven to 350°F. Bring large pot of salted water to boil. Add noodles and cook to al dente according to pkg. directions. Drain. Place a piece of wax paper on counter and lay out lasagna noodles so they don't stick together.

Meanwhile, in bowl, combine cottage cheese, Parmesan, parsley, pesto, egg, 1/4 tsp. kosher salt and pepper to taste; mix well. Ladle about 1 cup marinara on bottom of 9"x13" baking dish.

Make sure noodles are dry, then take 1/3 cup cheese mixture and spread evenly over length of one noodle. Roll carefully and place seam side down into baking dish. Repeat with remaining noodles, placing one snugly against the next. Ladle remaining marinara over noodles and top each one with 1 Tbs. mozzarella. Cover baking dish with foil, being careful not to touch cheese, and transfer to oven. Bake until heated through and cheese melts, about 40 min. Serve hot, garnished with fresh basil or parsley.
