Our Mini Fruit Tarts Recipe Is Handheld Happiness — Shortcut Makes It Extra-Easy

A tray of fruit tarts not only brings color to any snack table, it gives each of your guests a handheld treat that is sweet and easy to eat. We at the Woman’s World test kitchen wanted to create a version that is easy on the host, so we made these mini fruit tarts that start with store-bought mini tart shells that are pre-baked and located in the freezer section of your local supermarket. All you have to do is thaw ‘em out, fill ‘em with our homemade pastry cream, and top them with colorful fruit! Talk about simple and sweet. 

Make the prep for these mini fruit tarts even faster by learning how to peel kiwi in seconds. To peel kiwi quickly, trim off both ends of the fruit, leaving behind a cylinder shape. Then slide a spoon between the flesh and the peel and turn the kiwi, pressing the back of the spoon against the peel as you do so. The whole fruit will slide out in one go!

Ingredients

  • 1 cup milk
  • 4 Tbs. sugar
  • 2 1/2 Tbs. cornstarch
  • 4 egg yolks
  • 1/8 tsp. salt
  • 1/2 tsp. vanilla extract
  • 12 baked mini tart shells
  • 4 strawberries, hulled, sliced
  • 1 kiwi, peeled, sliced
  • 1/2 cup drained, peeled lychee, from 11-oz. can
  • 1 (4 oz.) cup mandarin oranges in 100% juice, drained

In bowl, combine 1/4 cup milk, 1 Tbs. sugar, cornstarch and egg yolks. In pot, combine remaining 3/4 cup milk, 3 Tbs. sugar and salt; bring to a boil over medium heat. Slowly whisk mixture into egg yolk mixture; return to pot. 

Cook over medium-low heat, stirring constantly, until mixture comes to boil. Cook until thickened, 1 min. Stir in vanilla. Transfer to bowl. Cover with plastic wrap directly on filling surface; let cool.

Transfer filling to pastry bag fitted with round tip. Dividing evenly, pipe filling into tart shells. Top tarts with strawberries, kiwi, lychee and oranges as desired.
