Tofu is simply soy milk curds pressed into blocks of varying firmness from silken to extra-firm. It’s a complete protein and a good source of calcium and iron, making it a heart-healthy alternative to animal proteins. Trouble is it has a reputation for being boring or bland. That’s why I love this Mushroom-Tofu Tacos recipe. It’s loaded with flavor and other good-for-you ingredients. Best of all, at only $1.93 per serving, it’s easy on your wallet.

Tofu takes on other flavors beautifully. Peppers are loaded with antioxidants and umami-rich mushrooms are high in fiber. We sauté them together, then add tofu cubes and chili powder. Serve it up over peppery arugula and top it with creamy avocado and crisp radishes. Our simple cream sauce comes together with milk, cayenne pepper and cheddar. The easy-prep drizzle adds the finishing touch to this delicious dish. Cook along with our video then let us know what you think.

In small pot, whisk together milk, flour and cayenne pepper; over medium heat, bring to boil, stirring often. Reduce heat to low; add cheese. Cook, stirring, until melted and smooth, about 2 min. Reserve.

In nonstick skillet, heat half of oil over medium-high heat. Add pepper and mushrooms; cook, stirring, until softened, 7–8 min. Remove. In same skillet, heat remaining oil over high heat. Add tofu and chili powder; cook, stirring, until golden, 5 min.

Add pepper mixture; cook until heated through, 1–2 min. If needed, over low heat, cook cheese sauce until heated through. Fill tortillas with arugula and tofu mixture. Top with avocado and radish slices. Drizzle with sauce.
