Set-It & Forget-It With This Pizza Meatloaf Recipe That Cooks Up To Moist And Tender Perfection
Jarred sauce makes it a snap to whip up
Meatloaf is one of my favorite fall (or anytime!) comfort foods. It’s so moist and delicious. Plus, you can customize it in so many fun ways. That’s what inspired this Pizza Meatloaf recipe. I’s like getting two treats in one. Best of all, it cooks up in the slow cooker so you can just set it and forget it until it’s ready to eat.
In keeping with the theme, we stir some pizza sauce and pepperoni in with the meat. Then add Italian seasoning, breadcrumbs, eggs and grated onion. The flavorful juices melt into the remaining sauce during cooking for a finished dish that’s sure to have your gang begging for seconds. No slow cooker? No problem! Spread 1⁄3 cup sauce in bottom of 13″x9″ baking dish. Prepare meatloaf as directed; add to baking dish. Spoon remaining 1⁄3 cup sauce over. Bake at 350°F until cooked through, 50 minutes. Ingredients
- ⅔ cup + ½ cup pizza sauce, from 14-oz. jar
- 2 eggs
- 1 tsp. dried Italian seasoning
- ½ tsp. garlic powder
- 1 cup fresh breadcrumbs
- 1½ lbs. ground beef
- ½ cup sliced pepperoni, 2 oz., chopped
- 1 onion, grated
- 2 Tbs. shredded Parmesan cheese
Instructions
PrintCoat 6-qt. slow cooker with cooking spray. Spread 1⁄3 cup sauce over bottom of slow cooker. In large bowl, beat eggs, 1⁄2 cup sauce, seasoning and garlic powder. Stir in breadcrumbs; let stand 1 min. Add beef, pepperoni and onion; stir gently until combined. Shape into loaf.
Transfer loaf to slow cooker; spread remaining 1⁄3 cup sauce over top. Cover; cook on low until cooked through, 21⁄2–3 hrs. Transfer meatloaf to platter. Skim and discard fat from slow cooker; spoon sauce around meatloaf. Top with cheese.
