Our Delicious Smoky Tomato-Red Onion Soup Recipe Is Packed With Health Benefits

Tomato soup is a classic comfort dish – especially when it’s paired with a gooey grilled cheese sandwich. And this soup is good for you, too: tomatoes are loaded with vitamin C! At the Woman’s World test kitchen, we made this yummy bowl even better by adding red onion, which is high in quercetin, an antioxidant that improves cellular function. Not only will this smoky tomato-red onion soup recipe deliver health benefits, it will also delight your tastebuds. The soup is extra rich in flavor, thanks to garlic, beef broth and a little brown sugar. 

Quick tip: When you’re done chopping onions for this soup, save the skins! They have 53 percent more quercetin than the onions themselves. To reap the benefits, make onion skin tea by rinsing the skins thoroughly and simmering in a pot of water for up to 30 minutes. Strain into a mug and sip throughout the day.

Ingredients

  • 1 red onion, chopped
  • 2 tsp. minced garlic
  • ½ tsp. dried thyme
  • ¼ cup butter
  • 2 (14.5 oz.) cans fire roasted diced tomatoes
  • 1 cup beef broth
  • 1 Tbs. brown sugar
  • Sour cream

In pot, add red onion, minced garlic, thyme and 1⁄2 cup water; heat over medium-high heat. Cook, stirring occasionally, until onions are caramelized, about 15 min. Add butter, tomatoes, broth and brown sugar. Reduce heat to low; simmer 20 min.

Transfer 3⁄4 soup mixture to highpowered blender, puree until smooth. Return to pot. Serve warm in bowls with dollops of sour cream.
