Juicy Steak and Bean Salad Recipe Is a Refreshing Bowl of Deliciousness

I’m a meat and potatoes kinda guy. But sometimes I like to switch things up with a dish that’s a little fresher yet just as delicious. That’s why I love this Steak and Bean Salad recipe. I still get that juicy sirloin I crave. Plus, the salad is packed with hearty ingredients so, it definitely satisfies a hungry appetite.

Bottled dressings are easy to upgrade with things like citrus zest, herbs, capers and more. We start with red wine vinaigrette and toss in chopped cilantro. The mixture does-double duty as a marinade for the meat and dressing for the salad. For even more fast flavor, once marinated, the sirloin gets rubbed with a mixture of cumin, garlic powder and cayenne. It cooks up to medium-rare perfection! Ingredients

  • 2/3 cup bottled red wine vinegar salad dressing
  • 4 Tbs. chopped fresh cilantro + additional leaves for garnish
  • 1 lb. boneless sirloin
  • 1 tsp. ground cumin
  • 1 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 6 cups baby spinach
  • 1 1/2 cups canned beans, such as kidney beans and chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/3 cup sliced red onion

In bowl, mix dressing and chopped cilantro; reserve half. Place steak in large plastic food-storage bag; add remaining dressing. Seal bag; toss until coated. Chill 2 hrs.

Remove steak from marinade; discard marinade. Mix cumin and next 3 ingredients; rub over steak. Coat nonstick skillet with cooking spray; heat over medium-high. Cook steak, flipping once, 4–5 min. per side for medium-rare. Let stand 5 min; slice. Place remaining ingredients in bowl. Top with steak. Garnish with cilantro. Drizzle with reserved dressing.
