Zesty Steak and Tomato Salad Recipe is a Dinnertime Delight

There’s nothing quite like a delectable grilled steak. It’s wonderful on it’s own, of course, but if you really want to give your tastebuds a treat, you’ve got to try this steak and tomato salad recipe. We combine marinated grilled sirloin with tomatoes, cucumber, chile pepper and baby greens, and top the mixture with peanuts and mint leaves for an amazing medley of flavors and textures. What makes this hearty salad truly unique, though, is the dressing. To make it, we puree fresh raspberries and add them to a zesty vinaigrette. The result is tangy, savory and sweet and it pairs perfectly with the smokiness of the grilled steak. After one bite, you’ll be hooked on this scrumptious dish!

Ingredients

  • 1 (6 oz.) pkg. raspberries
  • 2/3 cup bottled red wine vinaigrette
  • 1 lb. boneless sirloin steak
  • 6 cups baby greens
  • 1 (14 oz.) can bean sprouts, drained
  • 2 tomatoes, cut into 12 wedges each
  • 1 (6 oz.) cucumber, halved, seeded, sliced
  • 1/2 cup sliced red onion
  • 1 chile pepper, sliced
  • 1/4 cup chopped peanuts
  • Mint leaves (optional)

Instructions

Print

Puree berries; strain. Stir in vinaigrette. Reserve 1/3 cup. Place steak and remaining mixture in food storage bag; seal. Chill 2 hrs., turning bag several times. Drain.

Prepare grill for medium-high direct-heat cooking. Grill steak, flipping once, 4–5 min. per side for medium-rare. Let stand 5 min.; slice. Place next 5 ingredients on platter. Top with steak, pepper and nuts. Drizzle with reserved dressing. If desired, garnish with mint.
