Slim & Speedy Steak Teriyaki Stir-Fry Recipe Is A Weeknight Dinner Winner

This lean garlicky steak dinner is ready in a flash

Looking for a meal that delivers big on flavor without all the calories? This Steak Teriyaki Stir-Fry recipe from Hungry Girl Lisa Lillean definitely fits the bill. It’s ready to eat in just 20 minutes so it’s ideal for a weeknight. Plus, with only 263 calories, 8 grams of fat and 29 grams of protein, it’s satisfying and you can dig in almost guilt-free.

The trick to keeping this dish healthy? Prepare the vegetables in a nonstick skillet with just a spritz of cooking spray and a splash of water. They’ll steam up in mere minutes with a lot less added fat. Then simply add the steak, marinade, reduced sodium soy sauce and garlic. It cooks all in one pan so clean up is a cinch! Ingredients

  • 2 cups frozen broccoli florets
  • 1 cup sliced red bell pepper
  • 1 cup sugar snap peas
  • 8 oz. lean flank steak
  • 2 Tbs. thick teriyaki sauce or marinade
  • 1 Tbs. reduced-sodium lite soy sauce
  • 1 Tbs. chopped garlic

Bring large skillet sprayed with nonstick cooking spray to medium-high heat. Add broccoli, pepper slices, sugar snap peas and 2 Tbs. water. Cover and cook until broccoli has thawed and veggies are hot, about 5 min.

While veggies cook, thinly slice steak. Add steak slices to skillet; cook and stir until veggies have softened and steak is browned and cooked through, about 4 min. Stir in teriyaki, soy sauce and garlic. If desired, serve with hot cooked cauliflower rice.
