Deliciously Easy Tex-Mex Turkey Casserole Recipe Is a Make-Over Dinner Winner
Six ingredients are all it takes to make this supper sensation
My gang looks forward to a home-cooked turkey feast for both Thanksgiving and Christmas. While the buttery bird roasts, warm aromas waft through the house and fill us with anticipation for the comforting meal ahead. Trouble is, we never finish the entire thing in one sitting so, I’m always looking for creative ways to use up extras. That’s what inspired this easy-prep Tex-Mex Turkey Casserole recipe.
We toast corn tortillas to add crunch and help create distinct layers. When cooking with just a few ingredient, it’s key to start with flavor-packed items. We stir shredded turkey with jarred salsa and prepared enchilada sauce. Since the condiments already contain spices, aromatics and herbs there’s no need to add additional seasoning. Then, heart-healthy beans provide an extra dose of protein and ensure this dish will satisfy even the hungriest of appetites. Cook along with our video and let us know what you think.

Ingredients
- 12 white corn tortillas, from 25-oz. pkg.
- 3 cups shredded, leftover cooked turkey
- 1 (16 oz.) jar salsa
- 1 (15.5 oz.) can red kidney beans, rinsed, drained
- 1 (10 oz.) can enchilada sauce
- 2 cups shredded Monterey Jack cheese
- Fresh cilantro leaves (optional)
Instructions
PrintHeat oven to 425°F. Reserve 4 tortillas. Coat both sides of remaining 8 tortillas with cooking spray; place on baking sheets. Bake, flipping once, until lightly toasted, 3–4 min. per side. Cut all tortillas into 4 strips each.
Reduce oven temperature to 350°F. In bowl, combine turkey, salsa, beans and sauce. Place half of toasted tortillas in 2 1/2-qt. baking dish. Top with half of turkey mixture and 1/3 cheese. Repeat layering. Place untoasted tortillas on top. Cover; bake until heated through, 30 min. Uncover; top with remaining cheese. Bake until cheese melts, 8–10 min. If desired, garnish with cilantro.
