Almond Holiday Cookies
We beat a touch of honey and almond flavor into the butter to add natural sweetness to these nutty wafers.

Ingredients
- 1 cup butter, at room temp.
- ¼ cup honey
- 1 tsp. almond extract
- 2½ cups all-purpose flour
- ¼ tsp. salt
- 1 egg
- ¾ cup sliced natural almonds
Instructions
- On medium speed, beat butter and honey until fluffy and smooth, about 1 min.; beat in extract. On low, beat in flour and salt until combined, about 2 min. On large sheet of wax paper, shape dough into 10″ log; roll up in paper. Chill until firm, about 1½ hrs.
- Heat oven to 325°F. Coat 3 baking sheets with cooking spray. Cut log into 1⁄4″-thick slices. Place 1½” apart on baking sheets. In small bowl, lightly beat egg; brush dough slices with egg. Arrange sliced almonds on top in star pattern, lightly pressing to adhere.
- Bake until edges are lightly browned and cookies are baked through in centers, 8–10 min. Cool 5 min. Transfer from baking sheets to rack; cool completely.
