French Onion Soup Crostini

These handheld bites have all the flavors of the classic bistro soup — no spoon required.

Ingredients

  • 4 large onions, sliced
  • ¼ cup butter
  • 1 tsp. sugar
  • 1 tsp. baking soda
  • 1 Tbs. minced fresh thyme
  • ¾ cup beef broth (optional)
  • 24 slices French bread, lightly toasted
  • 1⅓ cup shredded Gruyere or Swiss cheese

Instructions

  1. In large skillet over medium-high heat, cook onions in butter, covered, 5 min., stirring occasionally. Uncover; stir in sugar, baking soda and thyme. If pan seems dry, add a few Tbs. beef broth or just enough to moisten. Cook another 10 min. or until golden brown, stirring occasionally. Season to taste with salt and pepper.
  2. Heat oven to 400°F. Place toasts on greased baking sheet. Divide onion mixture evenly among toasts. Sprinkle each with cheese. Bake 5 min. or until cheese is bubbly and starting to brown around edges. Garnish as desired.
