Spicy Jambalaya
Andouille sausage adds authentic Cajun flair to this satisfying meal — for a bit less spice, swap in precooked chicken sausage.

Ingredients
- 3 cups chicken broth
- 1 (14.5 oz.) can diced tomatoes
- 2 tsp. Creole seasoning
- 2 links andouille sausage (6 oz.)
- 1 onion, chopped
- 1 rib celery, chopped
- 1 red pepper, diced
- 1 lb. boneless, skinless chicken thighs
- 1 cup rice
- 1 scallion, chopped
Instructions
- Combine broth, tomatoes with juice and seasoning; reserve. Cut sausage into ¼ “-thick slices. Place onion, celery and red pepper in 6-qt. slow cooker. Top with sausage and chicken. Pour reserved broth mixture over top. Cover; cook on low 3½ hrs. Stir in rice. Cover and cook on low 1 hr.
- Using 2 forks, shred chicken. Stir back into rice mixture. Top with scallion.
