Spicy Jambalaya

Andouille sausage adds authentic Cajun flair to this satisfying meal — for a bit less spice, swap in precooked chicken sausage.

Ingredients

  • 3 cups chicken broth
  • 1 (14.5 oz.) can diced tomatoes
  • 2 tsp. Creole seasoning
  • 2 links andouille sausage (6 oz.)
  • 1 onion, chopped
  • 1 rib celery, chopped
  • 1 red pepper, diced
  • 1 lb. boneless, skinless chicken thighs
  • 1 cup rice
  • 1 scallion, chopped

Instructions

  1. Combine broth, tomatoes with juice and seasoning; reserve. Cut sausage into ¼ “-thick slices. Place onion, celery and red pepper in 6-qt. slow cooker. Top with sausage and chicken. Pour reserved broth mixture over top. Cover; cook on low 3½ hrs. Stir in rice. Cover and cook on low 1 hr.
  2. Using 2 forks, shred chicken. Stir back into rice mixture. Top with scallion.
