And to make things even easier, we swapped in minute steaks and cream of mushroom soup. This makes it the perfect weeknight dinner in just 20 minutes, without sacrificing any flavor. Plus, everything cooks in one skillet for easy cleanup. We like to serve it over egg noodles or rice.
When making this beef stroganoff recipe, first choose a cut like flank steak or sirloin for tenderness. Then, slice your pieces thinly against the grain. Ingredients
- 1 Tbs. butter
- 1 onion, thinly sliced
- 2 cups mushrooms, quartered
- 1 lb. beef minute steaks, cut into 2”x1” strips
- 1 (10.5 oz.) can condensed cream of mushroom soup
- 1/3 cup sour cream
- 2 Tbs. milk
- 1/4 tsp. pepper
- Chopped fresh chives and/or parsley (optional)
Instructions
PrintIn large nonstick skillet, melt butter over medium heat. Add onion; cook, stirring, until softened, 5–7 min. Add mushrooms; cook, stirring, until golden, 5 min. Remove.
Add steak to skillet; cook, stirring, until beef is no longer pink, 2–3 min. Remove. Return mushroom mixture to skillet. Stir in next 4 ingredients. Cover; over medium-low, cook until heated through, 5 min. Stir in steak. If desired, sprinkle with herbs.
