This Savory Brioche Breakfast Burgers Recipe Will Be Your New Brunch Favorite

The humble burger. So many possibilities exist within a simple patty and bun. We’ve explored a lot of variations, and one of our favorites is this brioche breakfast burgers recipe. Buttery, toasted brioche buns envelope a perfectly seasoned handmade patty, with melted cheddar cheese and the perfect fried egg on top.

Be sure to generously season your patties on both sides while cooking so they retain their flavor. We also recommend buying ground beef with an 80/20 fat content so they don’t dry out. And the fun doesn’t end there; you can add even more breakfast-themed toppings like crispy bacon, shredded hash browns or sliced avocado.

  • ½ lb. ground beef
  • ¼ tsp. pepper
  • 1 Tbs. olive oil
  • 4 eggs
  • 1 onion, grated
  • ½ tsp. salt
  • 4 slices cheddar cheese
  • 4 Brioche burger buns, toasted
  • Assorted toppings

In a nonstick skillet, heat olive oil over medium-high heat. Add eggs; cook, flipping once, until the egg whites have set and edges are crispy, 2 min. per side.

Heat the grill for medium direct-heat cooking. In a bowl, combine ground beef, onion, salt and pepper; divide into 4 pieces. Shape into patties. Grill 5–6 min. per side, topping with cheddar cheese during last 2 min. Serve on brioche buns with eggs and assorted toppings.
