Cauliflower Mac ‘n’ Cheese Bites Recipe
The comfort food favorite gets a fun and delicious twist you'll love!
Mac ‘n’ cheese is one of my favorites. All that cheesy goodness plus noodles — I mean, what’s not to like? Recently, though, I as I was planning a get-together with friends, I started thinking: Wouldn’t it be fun to serve mac ‘n’ cheese as an appetizer and make it a finger food that you don’t have to eat with a fork? And that’s how this scrumptious cauliflower mac ‘n’ cheese recipe was born!
The trick is to add cauliflower puree to the mac ‘n’ cheese mixture to make it heartier and a little healthier, too. Then, you simply portion it out into muffin tins and bake it. The result is a crispy, ooey-gooey cheesy bite that’s perfect to enjoy as you’re mingling at a party — or whenever you’re craving a comforting snack while watching your favorite show. These delicious bites are pretty much perfect for every occasion! And honestly, no one will even know the cauliflower is in there unless you tell them. It can be our little secret.

Ingredients
- 8 oz. macaroni
- 1 head cauliflower, cut into florets
- 2 Tbs. butter
- 1 clove garlic
- ½ small onion, minced
- 2 Tbs. flour
- 1 cup milk
- 2 cups shredded Cheddar cheese
- ½ cup grated Parmesan cheese
Instructions
PrintCook pasta as package directs. With slotted spoon, remove pasta to bowl. Add cauliflower to boiling water; cook 10 min. or until tender. Drain. Transfer half to food processor; puree.
In pot over medium heat, melt butter. Add garlic and onions; cook 5 min. Add flour; cook 1 min. Whisk in milk; let simmer 2 min., stirring. Stir in cauliflower puree and cheeses. Remove from heat. Add pasta and remaining cauliflower; toss to coat.
Heat oven to 400°F. Divide mac-and-cheese evenly among 12 greased muffin-tin wells. Bake 15 min. or until bubbly and golden brown.
