It’s filled with yummy ingredients that really satisfy — grilled chicken that’s been rubbed with spices, creamy avocado, crunchy cabbage and cucumber ribbons for extra flair. Ingredients

  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1 lb. boneless, skinless chicken breast halves
  • 1 mini cucumber
  • 2 Tbs. olive oil
  • 2 Tbs. lemon juice
  • 1 tsp. grated lemon zest
  • 1/8 tsp. pepper
  • 6 cups thinly sliced Napa cabbage or fresh bean sprouts
  • 1 avocado, peeled, pitted, sliced
  • 1 cup cherry tomatoes, halved

In small bowl, combine paprika, 1/4 tsp. salt and garlic powder; rub all over chicken.

Coat nonstick skillet with cooking spray; heat over medium-high heat. Add chicken and cook until browned, about 5 min.; flip. Reduce heat to medium-low; cover. Cook until no longer pink in thickest part, 8–10 min. Transfer to cutting board. Let rest 5 min. before slicing.

Using vegetable peeler, cut strips lengthwise from cucumber. In bowl, whisk together oil, lemon juice, zest, pepper and remaining 1/4 tsp. salt. Transfer cabbage or bean sprouts to serving platter. Top with avocado, tomatoes, sliced chicken and cucumber. Drizzle with dressing.
