Quick-Prep Chicken Broccolini Stir-Fry Recipe Speeds to the Table in 25 Minutes

I’m a big fan of stir-fries. They’re an easy and delicious way to get dinner on the table any night of the week. But if you don’t own a wok and so tend to shy away from this classic Asian cooking technique, then our Chicken Broccolini Stir-Fry recipe is for you — it’s made in an ordinary skillet.

When stir-frying in a skillet, I like to par-boil tougher veggies like carrots and broccoli first. Skillets don’t retain as much heat as woks, so this step ensures they turn out perfectly crisp-tender in less time. For our recipe, we opted for broccolini. This delicate cousin of regular broccoli is thinner, less bitter and easier to prepare. Another pro trick? Be sure to cook ingredients separately and in batches. Overcrowding results in steaming rather than browning. Then simply transfer everything back to the pan and stir in the velvety sauce. Best of all, it speeds to the table in under 30 minutes. Ingredients

  • 6 oz. broccolini, halved crosswise
  • 3/4 c. low-sodium chicken broth
  • 2 tbsp. honey mustard
  • 1 tbsp. balsamic vinegar
  • 1 tsp. cornstarch
  • 1 lb. boneless, skinless chicken breast, cut into ½" strips
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tbsp. olive oil
  • 1 clove garlic, minced
  • 2 scallions, sliced
  • 1/2 c. cashews

In large high-sided skillet, combine broccolini and 1⁄4 cup water; over high heat; bring to a boil. Cover; over medium-low heat, cook until just tender, about 3 min. Drain; rinse under cold water. Drain; transfer to plate. Reserve.

In medium bowl, whisk together chicken broth, honey mustard, vinegar and cornstarch; reserve. Sprinkle chicken with salt and pepper. In same skillet, heat oil over high heat. Add chicken; cook, stirring often, until no longer pink, 3–4 min. Remove. Reduce heat to low. Add garlic; cook, stirring, 30 sec. Add broth mixture; bring to a boil. Cook until slightly thickened, 1–2 min. Add chicken, broccolini and scallions; cook until heated through, about 30 sec. Sprinkle with cashews.
