Refreshing & Delicious Chicken Waldorf Salad Recipe Is a Hearty Twist on a Classic
This tasty toss speeds to the table in just 30 minutes
Waldorf Salad is a classic dish that originated at the Waldorf Hotel in New York city over a century ago. It consisted of apples, celery, walnuts, grapes and mayonnaise served over lettuce as an appetizer. Today, many fruit and nut salads are a twist on the original. That’s what inspired our Chicken Waldorf Salad recipe. But we’ve turned it into a complete meal.
Today most grocery stores carry rotisserie chickens. The seasoned meat along with hard-boiled eggs gives this toss a double dose of protein. As an added health bonus, Greek yogurt combines with mayonnaise to create the dressing. We keep the celery and walnuts used in the traditional then toss in sweet red apple, but you can sub in any variety you have on hand. Cook along with our video and watch how easy it comes together. Ingredients
- 4 eggs
- 1/3 cup walnut pieces
- 1 sweet red apple
- 1/3 cup plain nonfat Greek yogurt
- 1/4 cup mayonnaise
- 1 Tbs. apple cider vinegar
- 1/4 tsp. salt
- 8 cups torn romaine lettuce
- 2 cups shredded rotisserie chicken, about 8 oz.
- 2 ribs celery, sliced
Instructions
PrintIn small pot, combine eggs with enough cold water to cover by 1”; over high heat, bring to a boil. Cover. Remove from heat; let stand 10 min. Drain; rinse under cold water. Cover eggs with cold water. When cool enough to handle, peel and halve.
Heat small dry skillet over medium heat. Add walnut pieces; cook, stirring occasionally, until fragrant and toasted, about 5 min. Transfer to plate; let cool. Halve, core and thinly slice apple.
In bowl, mix yogurt, mayonnaise, vinegar and salt. Transfer lettuce to platter. Top with chicken, apple, celery, eggs and nuts. Drizzle with dressing.
