Easy Creamy Dijon Roasted Vegetables Recipe Is Sure To Become a New Family Favorite

My gang tends to be a bit picky when it comes to eating their veggies. So, I’m always on the lookout for fun and tasty ways to prepare them. That’s what inspired this Creamy Dijon Roasted Vegetables recipe. It turns out so delicious, everyone always asks for second helpings.
Roasting is a dry heat cooking method. It’s perfect for cooking veggies because the technique caramelizes natural sugars and adds a layer of bold flavor with a hint of sweetness. Our recipe contains loads of good-for-you ingredients like antioxidant-rich carrots and fiber-packed potatoes. Leeks add a delicate savory flavor. For smoky mmm, we stir in bits of ham. So yummy. Ingredients
- 1½ lbs. Yukon Gold potatoes, cut into 1¼" pieces
- 2 Tbs. olive oil
- ¼ tsp. salt
- 2 carrots, sliced
- 4 oz. ham steak, cut into ¾" pieces
- 1 leek, white and light green parts only, cut into ¼"-thick slices
- 2 Tbs. milk
- 1 Tbs. Dijon mustard
- ½ of 5.2-oz. pkg. Boursin Garlic & Fine Herbs cheese, at room temp.
Instructions
PrintHeat oven to 350°F. Coat rimmed baking sheet with cooking spray. In bowl, toss potatoes with 1 Tbs. oil and salt; spread in single layer over baking sheet. Roast 25 min. Toss carrots, ham and leek with remaining oil. Add to potatoes; roast until tender, 25 min. Heat broiler. Transfer mixture to 11⁄2-qt. baking dish. In bowl, whisk milk and mustard into cheese; spread over vegetables. Broil until browned, 2 min.
