My gang tends to be a bit picky when it comes to eating their veggies. So, I’m always on the lookout for fun and tasty ways to prepare them. That’s what inspired this Creamy Dijon Roasted Vegetables recipe. It turns out so delicious, everyone always asks for second helpings.

Roasting is a dry heat cooking method. It’s perfect for cooking veggies because the technique caramelizes natural sugars and adds a layer of bold flavor with a hint of sweetness. Our recipe contains loads of good-for-you ingredients like antioxidant-rich carrots and fiber-packed potatoes. Leeks add a delicate savory flavor. For smoky mmm, we stir in bits of ham. So yummy. Then to top it all off, we mix herbed cheese with a touch of Dijon and milk. It’s so ooey-gooey good, we promise it’ll become a new family favorite. Cook along with our video then leave us a comment
