Almond Holiday Cookies

We beat a touch of honey and almond flavor into the butter to add natural sweetness to these nutty wafers.

  • 1 cup butter, at room temp.
  • ¼ cup honey
  • 1 tsp. almond extract
  • 2½ cups all-purpose flour
  • ¼ tsp. salt
  • 1 egg
  • ¾ cup sliced natural almonds


  1. On medium speed, beat butter and honey until fluffy and smooth, about 1 min.; beat in extract. On low, beat in flour and salt until combined, about 2 min. On large sheet of wax paper, shape dough into 10″ log; roll up in paper. Chill until firm, about 1½ hrs.
  2. Heat oven to 325°F. Coat 3 baking sheets with cooking spray. Cut log into 1⁄4″-thick slices. Place 1½” apart on baking sheets. In small bowl, lightly beat egg; brush dough slices with egg. Arrange sliced almonds on top in star pattern, lightly pressing to adhere.
  3. Bake until edges are lightly browned and cookies are baked through in centers, 8–10 min. Cool 5 min. Transfer from baking sheets to rack; cool completely.
