Honey–Peanut Butter Cocoa Mousse

This dairy-free treat gets a dose of good-for-you protein from soft tofu.

  • 1 Tbs. honey
  • 1 (14–16 oz.) pkg. soft tofu, drained
  • 2 Tbs. unsweetened cocoa powder
  • 2 Tbs. smooth honey-roasted peanut butter


  1. In blender, puree honey, soft tofu, unsweetened cocoa powder and honey-roasted peanut butter 2 min. or until desired degree of smoothness, adding a few teaspoons of water to thin to desired consistency.
  2. Divide mousse evenly among 4 cups. Garnish with chocolate curls or as desired.
