Pumpkin Pie Chia Seed Pudding

  • 2 cups coconut milk
  • ¼ cup chia seeds
  • 1 tsp. vanilla extract
  • 1 Tbs. pumpkin pie spice
  • Whipped cream (optional)


  1. In large bowl, combine coconut milk, chia seeds, vanilla and pumpkin spice; whisk until creamy. Refrigerate 5 hrs.
  2. Divide evenly among 4 bowls or mugs. If desired, top with whipped cream. Keep chilled until ready to serve.
