Our Beef Chili With Chickpeas Recipe Is Fiber-Packed + Preps in Just 25 Minutes!

We at the Woman’s World test kitchen wanted to turn a comfort food into a bowl of nutrition, and we did just that by tossing fiber- and protein-rich chickpeas into the mix. Not only do these superfood legumes help keep you full for longer, but they also improve cholesterol and blood sugar levels. Simply top with fresh cilantro and a squeeze of lime and it’s ready to devour!.

Bonus tip: Onions add sweet-pungent flavor to many dishes including our beef chili with chickpeas, but cutting or chopping them always seems to result in teary, bloodshot eyes. The easy fix?   • 1 (15.5 oz.) can chickpeas
  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 Tbs. chili powder
  • 1 (15.5 oz.) can diced tomatoes with green chilies
  • 2 Tbs. tomato paste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro sprigs
  • 1 lime, cut into wedges


• Rinse and drain chickpeas. Heat 12” nonstick skillet over medium heat. Add ground beef, chopped onion and chili powder; cook, stirring occasionally, until flavors blend and beef is no longer pink, about 7 min. Stir in diced tomatoes and chilies with their juices and tomato paste, then chickpeas.

• Increase heat to medium-high and bring mixture to a boil. Reduce heat to medium-low. Cover skillet; cook, stirring occasionally, until flavors blend, about 15 min., adding cherry tomatoes during last 5 min. of cooking time. Top with fresh cilantro and serve with lime wedges.
