Grilled Chipotle Steaks

Tender, seasoned steaks are even more flavorful finished with a melty chipotle-garlic butter that adds a hint of smoke.

Ingredients

  • 1 lime
  • 2 tbsp. butter, softened
  • 2 tsp. minced canned chipotle peppers in adobo sauce
  • 2 tsp. minced fresh cilantro
  • 1 clove garlic, minced
  • 1/2 tsp. smoked paprika
  • 4 (1" thick) bone-in beef strip steaks, about 1 lb. each
  • 2 tbsp. olive oil
  • 2 tbsp. dry Montreal steak seasoning

Heat grill to medium-high. Grate 1/2 tsp. zest and squeeze 1 tsp. juice from lime into bowl; stir in butter, chipotle peppers, cilantro, garlic, and smoked paprika until blended. Reserve.

Coat steaks with oil, then sprinkle with steak seasoning. Grill, flipping once, until medium-rare, 4–5 min. per side. Transfer to serving platter; brush hot steaks with butter. Let rest 3–5 min. before serving.
