Gnocchi, or nocchio in Italian, are small dumplings typically made from potato, flour and sometimes egg. The dough is rolled into small pieces and may be pressed with a fork to create ridges, which helps sauce cling to it. In this recipe, sautéing the gnocchi gives them excellent flavor and a crispy exterior.

Kielbasa, a type of Polish sausage, brings a smoky, savory element to the dish that compliments the dish’s creaminess and pairs well with the gnocchi and cabbage.

Ingredients

  • 4 oz. cream cheese, at room temp.
  • 2 Tbs. olive oil
  • 1 (17.5 oz.) pkg. fresh potato gnocchi, such as De Cecco
  • 1 (14 oz.) pkg. kielbasa, cut diagonally into ¼”-thick slices
  • 1 lb. cabbage, cut into ½”-thick slices, 8 cups
  • ⅛ tsp. pepper
  • 2 Tbs. sliced chives
  • 2 Tbs. chopped parsley

Instructions

In bowl, whisk together ⅓ cup water and cream cheese until smooth; reserve. In large nonstick skillet, heat oil over high heat. Add gnocchi; cook, stirring occasionally, until browned, 5–7 min.; remove.

Coat same skillet with cooking spray; heat over high heat. Add kielbasa; cook, stirring, until browned, 5 min.; remove.

In same skillet, combine cabbage and ½ cup water; over medium-high heat, bring to a boil. Reduce heat to medium-low. Cover and cook, stirring occasionally, until cabbage is tender, about 10 min. Stir in reserved cream cheese mixture, gnocchi, kielbasa slices and pepper; cook, stirring often, until coated and heated through, 1–2 min. Stir in chives and parsley.
