Cook Time

  • 6 oz. large shrimp about 12, peeled, tails removed, deveined
  • 2 tsp. lemon juice
  • 1/2 tsp. garlic powder
  • 1/8 tsp. pepper
  • 6 oz. fully cooked chicken sausage about 2 links, sliced into coins
  • 1 c. cherry tomatoes halved
  • 1/2 c. frozen corn
  • 1/2 tsp. Cajun seasoning
  • 3 c. roughly chopped spinach

Heat oven to 400°F. Grease rimmed baking sheet. In large bowl, combine shrimp, lemon juice, garlic powder, and pepper. Toss to coat. Add sausage, tomatoes, corn, and Cajun seasoning. Mix until all ingredients are coated in seasoning.
