- 1 (6 oz.) salmon fillet
- 4 tsp. olive oil
- 1 strawberry, diced
- 1 tbsp. diced pineapple
- 1 tbsp. honey
- 1 tsp. diced jalapeño
- 1 tsp. diced red onions
- 1 tsp. lemon juice
Prepare grill for direct heat cooking. Brush salmon with 2 tsp. oil; sprinkle with salt and pepper. Grill 6–8 min., until cooked through, turning once.
Combine remaining oil with last 6 ingredients; season with salt and pepper. Top with salsa. If desired, serve with rice. Serves 1.
