Salads are a delicious way to get more healthy ingredients into your diet. But sometimes I crave something a little more surprising than the basic lettuce and tomato. If you’re like me, then you have to try this Fruity Greens & Goat Cheese Salad recipe. Plus, we have a trick to prepare the grapefruit that gives it restaurant-quality flair.

To separate the segments like a pro, simply slice the rind and pith away from the flesh. Next, working with a sharp knife over a bowl, carefully cut between the membranes to release the segments. We serve them over baby greens with strawberries, almonds and an easy-to-make citrus vinaigrette. Not a goat cheese fan? Feta or fresh mozzarella would be just as delicious. Cook along with our video and watch how easily it comes together. Then be sure to let us know what you think in the comments.
