Up Your Salad Game With This Fruity Greens & Goat Cheese Salad Recipe
This zingy toss of juicy fruit, tangy cheese and toasted nuts is sure to brighten up any day
Salads are a delicious way to get more healthy ingredients into your diet. But sometimes I crave something a little more surprising than the basic lettuce and tomato. If you’re like me, then you have to try this Fruity Greens & Goat Cheese Salad recipe. Plus, we have a trick to prepare the grapefruit that gives it restaurant-quality flair.
To separate the segments like a pro, simply slice the rind and pith away from the flesh. Next, working with a sharp knife over a bowl, carefully cut between the membranes to release the segments. We serve them over baby greens with strawberries, almonds and an easy-to-make citrus vinaigrette. Not a goat cheese fan? Feta or fresh mozzarella would be just as delicious. Ingredients
- 2 grapefruits
- ¼ cup olive oil
- 2 Tbs. minced red onion
- 1 Tbs. red wine vinegar
- ¼ tsp. salt
- ¼ tsp. pepper
- 14 cups baby mixed greens
- 2 cups strawberries, trimmed, quartered
- ¼ cup whole almonds, toasted, chopped
- ½ cup crumbled goat cheese, 2 oz.
Instructions
PrintGrate 1 tsp. zest from grapefruit. Peel grapefruit and cut into segments. Reserve segments. In large bowl, whisk together oil, onion, vinegar, salt, pepper, and zest.
Add greens, strawberries, and almonds. Toss until combined. Transfer to serving bowl; top with reserved grapefruit segments and cheese.
