Ginger-Beef Stir-Fry Recipe Cooks Up Full of Flavor in Just 30 Minutes
This one-pot dinner is fast, easy and delicious, making it perfect any night of the week
When I’m looking for something fast and flavorful to make for dinner on a weeknight, stir-fry is one of the first things that comes to mind. It’s so delicious! I love the medley of flavors, all the fresh veggies sprinkled through it, and the protein that makes the dish so hearty and satisfying. Stir-fry is also easy to make and it’s speedy, too, so it’s the perfect dinner to whip up after work. And all that is what makes this ginger-beef stir-fry recipe so good! It features sirloin steak and potatoes (yes, potatoes!), plus veggies like green beans. We build the flavor of the dish by starting with veggies and potatoes, then add the steak and mix it all with zesty hoisin sauce jazzed up with lime juice and ginger. Yum!

Ingredients
- 1/4 cup hoisin sauce
- 2 Tbs. lime juice
- 1 Tbs. grated peeled fresh ginger
- 4 scallions
- 2 Tbs. oil
- 1 lb. baby potatoes, cut into 1/4”- thick rounds
- 8 oz. green beans, trimmed, cut into thirds
- 1 red pepper, sliced
- 1 lb. boneless beef sirloin steak, cut into strips
- 1/4 tsp. salt
- 1/2 cup basil leaves
Instructions
PrintMix first 3 ingredients and 2 Tbs. water. Cut 3 scallions into 2” pieces. Cut 1 scallion into strips. In nonstick skillet, heat 1 Tbs. oil over medium-high; add potatoes. Cook, stirring, until tender, 10 min.; remove. Add beans and pepper. Cook, stirring, until tender, 5–6 min.; remove.
Sprinkle beef with salt. Add remaining oil to skillet; heat over high. In batches, add beef; cook, stirring, until browned, 2 min. Return all beef to skillet along with vegetables, hoisin mixture and 2” scallion pieces; over medium-high, cook, stirring, until heated, 1 min. Top with basil and scallion strips.
